Whole sea urchins opened to reveal five generous lobes of bright orange roe - rich, buttery and intensely savoury, with a clean sweet finish that lingers.

The roe is at its peak: firm enough to hold its shape on a spoon, soft enough to melt over warm rice. Serve it raw over sushi rice, spoon it onto toasted nori, or fold it through pasta with a little butter and lemon.

Delivered chilled in its natural shell to protect the lobes in transit. Best enjoyed within 24 hours of arrival.
